Here’s a bold Western ranch favorite that looks right at home with these handles:

Ranch Style Texas Beef Enchilada Skillet (serves 4–6)

Ingredients:

• 1 lb ground beef

• 1 medium onion, chopped

• 1 bell pepper, chopped

• 3 cloves garlic, minced

• 1 packet (1 oz) taco seasoning

• 1 can (10 oz) red enchilada sauce

• 1 can (15 oz) black beans, drained and rinsed

• 1 cup frozen corn

• 1½ cups shredded Mexican cheese blend

• 6 corn tortillas, cut into strips

• 2 Tbsp oil or lard

• Fresh cilantro, sliced jalapeños, and sour cream for topping

Directions:

1. Heat oil in a large cast iron skillet over medium-high heat. Cook ground beef, onion, and bell pepper until beef is browned.

2. Add garlic and taco seasoning. Cook 1 minute more.

3. Stir in enchilada sauce, black beans, and corn. Simmer 5 minutes.

4. Add tortilla strips and stir gently to combine.

5. Sprinkle cheese evenly over the top. Cover and cook 3–5 minutes until cheese is melted.

6. Top with fresh cilantro, jalapeños, and sour cream. Serve hot.
